Title: Omelet

4 Eggs
3/4tsSalt
1/4cWater
1/8tsPepper
1/2tbMelted butter or butter substitute
  Cayenne

Beat egg yolks until thick and lemon colored. Add seasonings. Beat egg whites until foamy. Add water and continue beating until stiff. Carefully fold into first mixture. Pour into hot frying pan containing butter. Cook over low fire until well puffed, slightly brown on bottom, and firm to the touch. Cook under a low broiler flame 2-3 minutes. After omelet is well puffed and slightly brown on the bottom, the cooking process may be completed in a moderate oven (375 F). Crease omelet. Fold. Serve at once. If desired, 1/4 cup finely chopped ham or grated cheese, or 2 tablespoons tart jelly, may be placed on 1/2 the omelet just before it is served. 4 servings. The Household Searchlight
